Teff is an ancient grain alternative to wheat, thought to originate in Ethiopia between 4000 and 1000 B.C. The word teff is believed to originate from the Amharic word 'teffa', which means lost, due to the small size of the grain and how easily it is lost if dropped. It is the smallest grain in the world; a wonderful substitute for flour in baked goods and is packed with nutrients. A healthy addition to any diet, the grain contains high levels of calcium, phosphorous, iron, copper, aluminum, barium, thiamin, amino acids, protein, carbohydrates and fiber. (Whew!) Not to mention it contains no gluten. In Rose's Bakery, we add cocoa to the mix to give it a rich, dark flavor.
